Easy Summer Cooking

With summer right around the corner, dinner seems to be one of the frantic woman’s worst problems.  Many nights, time is the major dilemma when it comes to meal planning.  But, it could be you're stuck in a rut. And while that rut might be “I have no time to cook.” It could also be you’re tired of making the same old thing.  Or it could be that no one is home at the same time and what do you make for all the different schedules?

Well, to give you a little help in the right direction, here are two easy recipes to customize for your family members. And the best thing, these recipes can be made ahead and frozen for when you need them most. 

M.J.’s Mini Strombolis

Ingredients

  • One frozen loaf of bread dough
  • One half pound of deli lunchmeat, your choice (You can use two varieties for a thicker Stromboli.)
  • One half pound of cheese, your choice

To Make

Allow bread dough to thaw and rise according to the directions.  Divide into quarters. On a floured surface, roll each part into a rectangular shape. The approximate size should be 8" by 5".  Layer the meat, then cheese.  You can add another layer of meat if you desire.  Roll up as if you were making a jellyroll and place on a lightly greased cookie sheet.  Tuck the ends under. 

Use an egg wash to paste the edges together to keep from unrolling.  You can also moisten the edges with water.  Variations: Add mushrooms, olives, onions, etc.

To Bake

Bake at 350 degrees for about 20-25 minutes or until a light brown. 

Tips: Keep the cheese in the center of the rectangle. This keeps the cheese from oozing out the seams.  Place foil on the bottom of a cookie sheet for easy clean up. You can vary the meats and cheese to your family's preferences.  Layer pepperoni and cheese for a pepperoni Stromboli.  This makes a great afterschool or party snack.  You make can a larger Stromboli by dividing the frozen loaf in two parts, rather than four.  Lastly, make several and freeze.

Mom's Foil Sandwiches

Ingredients

  • One 8-pack of sandwich buns
  • 1 pound chipped ham or shaved ham lunch meat (Or you can grind ham as if for ham salad)
  • 1 stick of butter, melted
  • 1 clove garlic, ground
  • 1 small onion, finely chopped
  • 8 slices of cheese, your choice
  • Foil

To Make

Melt butter. Remove from heat and stir in garlic and onion. Spread butter mixture on inside top and bottom of buns. Place desired amount of ham on sandwich. Add one slice of cheese. Close sandwich and wrap in foil. Freeze or heat.

To Bake

When ready to eat, heat in 350 degree oven until heated through or cheese melts. (This can take 30 minutes or so if frozen.)  Or can remove from foil and microwave on medium.  (Much better from oven.) 

Tips: Make several dozen and freeze. Can keep frozen for 1-2 months.
